Favorites: Dinner Kits from Good Eggs

I'm so excited to partner with Good Eggs to bring you a preview of their new Weeknight Dinner Kit launching on April 16th. I've tried other meal kits before and there were always two things I didn't like about them--too much wasteful packaging and it took at least an hour to prep and cook. When I received the Good Eggs Weeknight Dinner Kit, I was so happy to see that the box was small, the ingredients were minimally packaged, and any packaging material that was required was compostable.

The kit came with 3 dinners and each one literally took only 10-15 minutes of prep time. Each recipe is clearly marked A, B and C with corresponding labels on the ingredients. It was easy to distinguish and separate for storing in the fridge.

I decided to make the Mint Pesto Pasta with Spring Peas and Green Garlic first. Initially I thought it wasn't enough food but turns out I had some pesto leftover so I could make a lunch the next day. Score! Lucas and Theo LOVED it! They never had mint and arugula pesto before and they kept asking for more. Score again! The meal came with a giant salad and a yummy red vinaigrette.

    Favorites: School Lunches With Fluf Lunch Bags

    For many parents, including myself, school lunches can be a little daunting--what to pack each day, deciding between a warm lunch or cold, not wanting to spend too much money if it's going to come back uneaten, etc. Today, I've partnered with modern kids online shop Ziraffe who sent over some of the cutest lunch and snack packs from Fluf. They are washable, have a water-resistant BPA-free lining, durable, super cute, and made of organic cotton. I've paired them with our favorite lunch box to show you some lunch ideas that work for both Lucas and Theo.

    Theo's nut-free preschool lunch in the Cactus Zipper Lunch Bag (left):

    • pomegranate seeds
    • cucumber slices
    • apple slices
    • brown rice cake
    • mandarin orange slices
    • kiwi
    • yogurt covered pretzel (dessert)
      note: I usually include a protein such as string cheese or a sun butter sandwich but his class was having rice and beans that day so I omitted it.

    Lucas' first grade lunch in the Grey Zipper Lunch Bag (right):

    • blackberries
    • kiwi
    • olives
    • string cheese
    • peanut butter and jelly sandwich
    • sliced apples
    • organic dark chocolate coconut chips (WF bulk bin!)

    A few other school lunch tips:

    • Either make the lunch with your kid or ask them what they'd like in their lunch
    • Give them a choice (i.e. do you want pears or apples? a sandwich or a quesadilla?)
    • Pack the night before--for apple slices, cut them in the morning and have one of the kids rub lemon on them to prevent from turning brown
    • For kids who hate bread crust, I do one of two things: I either leave it on because sometimes my kids are so hungry they eat the whole thing, or I cut off the crust and put it in the actual sandwich (they can't see it or taste it, but they're eating it!)

    I bought most of these from Trader Joe's and Whole Foods. The cost for each lunch comes out to under $4 and all of it minus the olives and pretzel is organic.

    I supplemented their lunch with some snacks. These Fluf snack packs are so convenient for school or just everyday use. I love the velcro closure for little hands and how roomy they are. I put cut-up carrots and gluten-free pretzels in the Fluf Mama Love Snack Pack for Theo. Lucas has raw almonds and cut-up carrots in his Hi Snack Pack.

    The lunch bags hold a lot (probably even artwork and jacket!).

    I love that there's a sturdy interior pocket for a water bottle or an ice pack.

    I don't know what's worse--a million Lego pieces all over the house or a few Legos on the floor that you step on with your bare feet. Ouch, right!?! Either way, Legos need a place of their own. Lucas and Theo were so lucky to inherit their cousin's gazillion Legos which they love and play with on a daily basis (remember our trip to Legoland?).     The new Tea Collection is inspired by travels to Italy and it's SO good. It was recently remodeled and the school grounds were perfect for the kids to ride around on their Mini Micro scooters (best scooters ever!) and romp around on the new play structure for hours.

    Favorites: Tulsi Scarves by Tara Hogan

    It's been a little crazy weather wise around here--I'm talking 70s during these "winter" months and then all of a sudden rain and high winds. Either way, I get cold really easily and wear a lot of layers like an old Chinese grandma. One way of keeping warm without wearing a hat (note, I do NOT look good in hats) is wearing a scarf. I love love wearing scarves especially ones that are light and long enough that I could wrap around once or twice and feel cozy.

    Not only does she design cute t-shirts, but my friend Tara Hogan of Ink & Wit has designed a new line of beautiful Tulsi scarves. I absolutely LOVE these scarves. Printed by master block printers on the outskirts of Jaipur, India using natural non-toxic dyes, these silk and cotton scarves are light with raw edge ends and have the most beautiful patterns and natural colors. Tara sent me the Ojas design and now I think I need the Amrita or Nadi too!

    My Real Life 2015 Best Nine and Happy 2016

    9. Lisa went to Tulum and got a tan--Nick hiked the Trinity Alps and got pneumonia / I also conquered a very big fear of mine!

    Last weekend I took Lucas to the grand opening of The Butterfly Joint in San Francisco. Visiting this amazing woodworking studio has been on my to-do list for quite some time now and I'm so happy we had the chance to go.

    The Butterfly Joint is a woodworking and design studio for children ages 18 months and up (and adult classes are offered as well). There are individual classes as well as camps. Students clock in with their own punch cards, strap on an apron and start working on their projects. I love that the goal is to create an heirloom-quality piece to bring home and keep in the family forever. Could you imagine how proud the kids would be?

    The grand opening party was so much fun! There was a tool treasure hunt where Lucas had to complete a different task at a work station--luckily there was always someone there to help him out. He got to use tools he'd never heard of before--a vise, a dozuki saw and a bit brace! Once he completed the treasure hunt, he got a bag full of goodies from some of our favorite companies like Petit Collage, Hello Lucky, Bitte, Mapamundi Kids, and Plae. Lucas' favorite part was pulling that steam whistle at the end!

    When my friend Lisa told me about her latest business endeavor, Ginger Caftan, I was super excited for her (and her business partner Nan). I was excited to design her logo/branding and knew she would do amazing things. Several weeks ago she hosted a Ginger Caftan trunk show in her beautiful home. Complete with a signature ginger mocktail and delicious catered Mediterranean food, the trunk show was a hit and nearly every piece was sold out. So proud of my friend!

    To be honest, when Lisa first told me about the caftan show, I didn't hesitate to say yes to attend the show for support -- but I am not a caftan person. I instantly thought I would look like Mrs. Roper in a mumu. But after seeing the fabrics (from vintage styles to bright patterns to neutral tones), the expertly designed details (like pockets!! I love pockets!) and the flattering and comfortable fit on all body types, I can now say I'm a caftan convert!

It secretly broke my heart that he didn't do much drawing, crafting and creating and would rather perfect those gross motor skills. But this past year something changed and Lucas was ready for art. Really really ready. His art file started overflowing and all he wanted to do was draw, cut, color, fuse beads, make books, write letters, words, names. Do you know how happy this makes me? I just love seeing his creative mind explode. He recently started drawing block letters -- I honestly had no idea he could do that but I'm totally in love with them.

    Of course, there's still plenty of running, jumping and climbing, but it just melts my heart to see him express himself through art.

    Last week I got a super sweet invitation from my friend Jeanne of Shop Sweet Things (one of my favorite lifestyle blogs) to attend a private dinner at Williams-Sonoma in San Francisco's Union Square to celebrate the latest book by Jennifer Tyler Lee, an award-winning author, game creator (Crunch a Color), and healthy eating advocate. The 52 New Foods Challenge book launch party was so much fun! And even more fun was meeting Jennifer, watching her cook and getting totally inspired by her tips on how to make it fun and playful for kids to eat healthier and try new foods.

    The Williams-Sonoma team really brought it together with a beautifully simple tablescape that included fresh and pickled jarred vegetables and along with fresh flowers.

    Another highlight of the night was meeting Amanda Haas, Director of Culinary at Williams-Sonoma, founder of One Family One Meal and author of Cooking Light Real Family Food. We follow each other on Instagram so it was nice to finally meet her in person. She's such an inspiration and a total sweetie with laid back style and humor.

    These Quinoa Crumble Cakes were surprisingly one of my favorite dishes of the night. I made quinoa cakes before and they did not taste anything like these! Ha! I had about 9 of these that night.

    Also loved the Clay Pot (but not made in a Clay Pot) Chicken Fried Rice. Super easy to make and so good! My kids would love it so it's on my list to make soon (like this week!).
